Mexico, Finca Fatima Especial

This single-origin is roasted medium bringing out notes of chocolate and berry. 

The beans come from Finca Fatima which has been in the family of Ernesto Perez and his sister, Givette Perez Orea, for nearly a century. This is processed using the washed method. After selective handpicking, ripe cherries are de-pulped to remove the outer fruit layer. The beans are then fermented in tanks, washed using clean water, then spread out on raised beds to dry.
